Pizza Dough (Preferred Recipe)

  • 2 (and then some - more like a bit under 3 start with 2.25 and work up) Cups high gluten (bread) flour
  • 1 Cup water
  • 1 Tablespoon unsalted butter
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 heaping teaspoon active dry yeast
  • 1 Tablespoon oil

Mix together until it stops sticking to the sides of the mixer bowl.

Put into a tub in the fridge overnight.

In the morning, separate into individual dough balls and put back into the fridge

1 hour before using, remove from fridge to warm to room temperature.
